Why not go to the Dallas Semi website and request some free samples of the DS89C430? If nothing else, at least you will be using the same MCU at home that you are learning on in school.
The website also offers a schematic for a simple programming interface that will use the free Dallas software to load the MCU via a serial connection. This way you will be up and running much faster than you could by trying to hang an EEPROM to a rom-less MCU. Unless you have a programmer for the EEPROM I'm not sure how you would program it.
